I test all of my mixes on the go, and I know that after 4 weeks, even with a really stubborn custard, it’s going to peak, and it’ll be much the same after 6 weeks. I’m not talking about people who actively do this, I’m talking about people creating a mix for the first time and throwing a “6 week steep” tag on it, just seems a bit random.
