From what I can find out, triaciton( think I’ve spelled that right?) and or citric acid can give the illusion of fizz.
Might be worth experimenting with?

I actually never knew what a real sherbert was, so thanks for that. All ive ever known as sherbert was the raspberry, lemon or lime, and orange stuff in the ice cream aisle.

The sour mate is definitely citric acid imo… triaciton i have never heard of it. The fizzy is fizzy off the SAV but does die down.

TFA has Triacetin although I can’t seem to find it in the UK.
I wonder if the fizz is basically Triacetin as the base carrying a 10% solution of citric acid?
The sourness from citric might be enough to trick us into thinking its fizzy? Until I can source the Triacetin I won’t be able to try out but I might just make up a 10% citric in PG and try it at various % to see where the land lies?
