I asked TPA about the shelf life of concentrates (not specifically about steeping). IIRC, he said keep air out as much as possible. In other words, don’t keep opening them up just to smell them. Over time, depending on the flavor, some just lose potency and some start tasting weird due to certain molecular changes. He recommended using your flavors within 6 months time.
IDK if this has any bearing on steep time but thought worth mentioning.
Thanks for the information! I was actually looking into this last night. It does seem that air is the primary source of degradation of concentrates. I also wonder about keeping them in plastic vs glass. According to TPA (there is a message from one of their reps in multiple places online), plastic should be avoided for “long term” (>1 month…) storage. I sent a big mail to Flavour Art yesterday asking about this, and also the other variables mentioned in this thread re. steeping. I hope they respond because that would give us a lot of good info straight from the source.
