Same here in Chicago area. Saw some rain coming and figured I get it done before it got wet. It’s now Saturday at 5:30 PM and 5 inches of rain later. The ground is soaked.

Too hot to hang outside until after 7:00 pm.

I’m making some - what I call - Crazy Sally Salad. When in Rome we did what they do and had a Caprese salad. Slices of creamy Mozzarella topped with sliced tomatoes and basil. Salt, pepper and olive oil. That’s it. Great appetizer or lunch.

Course I can’t leave well enough alone, so I boil some noodles, shred the cheese, (whole milk, NOT low fat or skimmed!) chop the tomatoes smaller and add prosciutto that’s been soaking in lemon juice for an hour, and some basil.

That meat can be just a tiny bit chewy but the lemon juice breaks is down so it’s fall apart tender. The juice adds a subtle flavor. A little lemon infused olive oil and your golden.
