The recipe @Alisa posted above is authentic, and she sure should know…she is an authentic TX hen.
and for sure one I would never kick out of my chicken coop…err err err err err cockadoodledoo [flapping wings]

I am not a fan of Cumin. I use it at most 50% of what a recipe calls for. Some recipes need it, so I use it, just less.
You may love Cumin. Sometimes I even sub Turmeric for Cumin, even though some in my family, living and dead,
slap my hand for it. I have big, tough hands.

Once upon a time, at a Revolver brewery Saturday concert, @Alisa slapped me…on my…but that was before she married the wonderful Sean. Lucky gentleman he is !

Yes indeed! Am thinking of making the recipe @Alisa posted but use the chiles you mentioned instead of the pine tasting ones?

I normally use a combination of Pasilla chillies and Chipolte’ peppers. Yummmmm

Yes, but non-Texans would not understand.
Just like…if a good ole Texas gal ā€˜slaps’ you…the ā€˜slappee’ most likely fukd up…
and it is like a man punching them.

Yep, always blend chiles…unless you are stuffing fresh ones.
