I have Caramel (FA) and Caramel ((Flavorah)), the recipe I want to make is with 5% Caramel (Original) (TPA).
To replace the 5% Caramel (Original) (TPA) which one of the ones I have would you use and at what percentage?

It is a personal taste thing
Caramel flavorah i would drop it about to about 1% - 1.8%
Caramel (FA) drop it to about 1 - 2%
5% Caramel Original is a pretty strong caramel.
I would be tempted to do a mix of both flavorah and fa - say 0. 8% Fa and maybe 1% Flavorah
You will have to experiment to find the right balance for you. Which would mean starting low on both and adding small increments until you reach your desired caramel flavor.
I also thought that 5% Caramel Original was pretty high.

For me personally I would probably drop everything down a notch but that is for my tastes (and my tastes only).
Since you are subbing ingredients you really are no longer making that recipe (which maybe very nice I have not made it) so I would just adjust to until you find a spot that you are happy with.
If you want to get a good dose of caramel like that recipe has then a mix of your 2 caramels until they equal about 3% that should do it
