Lemon custard with graham crust

OK Ladies and well the rest of us. I’ve got a quandary. I bought some ice cream day before yesterday and we had some last night. I got it at Save Mart so the ones that could actually taste it that I know of are the central CA people. But here’s my questions

Every juice that has graham or crust or something like that seems to have a wet sock after taste to me. This Lemon Custard is so perfect it’s lemony with the slightest hint of tartness yet sweet smooth lemony and creamy. The graham crust in it is more like lifquid graham crust there are ribbons of it through it but is it soft and as it desolves in your mouth you get that graham flavor with sweetness and a little bit of a buttery taste. Any suggestions on how to get a better graham flavor in my juices? does anyone use the TPA lemon cookie in anything, I wonder if I combined in the mix if I might get a sweeter crust taste without the nasty aftertaste. Any suggestions are appreciated

Lemon Sicily (FA) 1% = tartness Lemon juice flavors are sour
New York Cheesecake (Graham crust) 3% = Creaminess+ graham
Vanilla Custard 1%-2% Body
Lemon Cookie might tone down the graham add the floral/sour lemon
or Juicy Lemon (CAP) 1%
Vanilla Bean Ice Cream or your fav Ice cream (not vanilla)

I tend to add CAP Sugar Cookie @ 3% or Cookie FA @ 1-2% to mellow out the Graham. I keep the Graham around 1%. Sometime I just sub the Graham for the Sugar Cookie or Cookie.

FA Custard can be a little lemon-ey as well.

4-6% cheesecake graham 1% brown sugar. The brown sugar does amazing things to the cheesecake graham.

I’ll have to try that the initial problem being the fact that anything with crust or graham in it seems to taste like wet sock to me.

hopefully you didn’t get a bad batch. I get that same taste from flavorah crunch and they’re fruit loops flavor. I guess it could be our taste buds too though. I know mine have definitely changed over time. I used to hate tfa fruit hoops and then I went through a phase where I loved it. So I learned not to say “I hate that flavor” but to start saying “I don’t care for that flavor right now”! LOL.

I’ve tried graham and crust six or seven times since I started mixing in October and every time I get the same aftertaste. I have three different bottles of flavor with graham in it and two bottles of crust . part of it was given to me and I purchased a small bottle then a larger bottle. It’s not a bad batch as I have my flavor proofer at hand whenever I mix something new (Wifey) that is.

I noticed you don’t have any custard In it. This is just my opinion and it’s all subjective, but lowering the creams and adding custard should help carry your lemon and add a nice mouthfeel. From my experience with creams is at higher % will dull fruits.

1% Sweet Cream and 1% Cream Fresh is plenty combined with your VBIC giving you 3.5% creams. Adding VC v1 Cap will give you mouthfeel and a lingering lemon taste.

I’ve yet to find a custard I can tolerate. I just don’t care for them.
