I’m looking for any and every tip to understand how commercial flavourings make their recipes taste pleasant. I know a lot of them use caramel although I’m not a fan of it. But I’m looking to make a golden tobacco flavouring that’s nutty and has a hint of vanilla and a bit of sweetness so any tips will be appreciated! I’m curious what type of sweetener would be recommended that can’t be pinpointed to a specific sweetness like caramel or butterscotch but one that just makes it sweet without a background flavour to it

Biscuit in low amounts.
Chemnovatic Peanut is a lesser dry nut flavouring and gives a little sweetness and Almond in low amounts before it steers towards marzipan & Cherry.
Tfa pistachio does too although its more creamy than pistachio.
Toffee is different than caramel so worth a look with CCW or VTA Old English Toffee at the top of my list.
FWIW i dont use sweeteners as such and rely on the flavourings inherent sweet profiles to get to my finished recipes.
