Underrated & All-Star Flavor Concentrates

I thought it might be valuable to have a thread where we could share little-known, underrated, or best/favorite flavor concentrates, so people can see what they might be missing for the best flavor experience…

Here’s one that has been around for a while but has only been in 21 public recipes:

Ripe Galia Melon (SC) (WF)

I have a lot of melon and watermelon flavors but this one is easily the best in my opinion.

Description: A Galia melon is a sweet, juicy hybrid of cantaloupe and honeydew, with a netted rind like a cantaloupe and pale green flesh like a honeydew, offering a tropical, musky flavor.

Flavor Concentrate Profile:

​Primary Notes: It leads with a very realistic, juicy green melon sweetness. Unlike some honeydews that can lean “candied” or floral, this stays firmly in the natural fruit category.

​Body: It has a soft, almost creamy mouthfeel that mimics the softened flesh of a perfectly ripe Galia. There is a subtle “honeyed” undertone that adds depth without being heavy.

​Finish: The finish is clean with a slight tropical vibe, avoiding the “rindy” or chemical off-notes sometimes found in other melon concentrates.

Overall this is the most accurate and well-rounded melon flavor that I’ve tried yet, and it can be used as a standalone/single flavor. But It is also quite “wet,” making it great for adding juiciness to recipes that feel a bit dry.

Usage/Percentage: Personally, I like to use this at around 5% while adding an additional 1-2% of another melon (Hami Melon (WF), Wild Melon (Flavorah), etc.) to round it out; no sweetener needed.

Where I Got It: I found this on diy-ejuice.com for a good price and haven’t seen it elsewhere, but it can probably be found at a couple other places if you look hard enough.

Another one that’s fairly new (2 years?) that only has 29 public recipes (20 of which are mine :sweat_smile:), is Maqui Wild Berry Jam (CAP).

This is probably my most valuable flavoring for complex, sophisticated fruit recipes. The taste is absolutely amazing.

Description: Fresh maqui berries are a deep purple berry from South America that have a mild, refreshing, and slightly tart flavor, often described as a mix of blackberry, blueberry, acai, and watermelon with a hint of acidity.

Flavor Concentrate Profile:

​Primary Notes: It has a heavy dark berry profile, like of a cross between an elderberry, an acai berry, tart blueberry, and a dark little cherry. It has a slight “tannic” or skin-like quality that gives it a sophisticated, almost ‘white cranberry’ or wine edge. But it’s definitely more sweet than tart.

Body: The “jam” here refers more to the density and sweetness rather than a sticky, pectin-heavy texture. It feels like a thick, reduced fruit compote or a gourmet preserves spread. This definitely has a deep and complex flavor.

Finish: There is a lingering tartness and a slight floral/earthy musk on the exhale that prevents it from becoming too sweet/jammy.

Usage/Percentage: This can easily dominate a mix if used too heavily, turning the entire recipe into a singular “purple” note. That being said, it’s great as a single flavor at around 4-6%.

It can deepen other berries at around 0.25-1% and makes a great base flavor at 2-3%.

I think it’s best use is as a base for other fruity recipes, such as a cherry compote, blueberry jam, or raspberry preserves. Or as a filling for for pastries and Old World style desserts such as my Pfalzkuchen Jelly Bismarck.

Where I Got It: Bull City Flavors, and it is inexpensive.

Here’s one more. It’s only been used in 4 public recipes (besides mine), but it’s an underrated/un-rated flavor.

Grapefruit (Natural) (WF).
NOT to be confused with Grapefruit (SC) (WF), which has poor reviews and is more of a light, white grapefruit peel zest w/o body.

Grapefruit (Natural) (WF), on the other hand, is a completely different animal. First, it is twice as strong as the other grapefruit. And, it’s a full ruby red grapefruit flavor: peel, pith, juice, and meaty insides. It is thick, fleshy, and even juicy and saturated. It also has a nice citrus funk, and is not overly bitter.
It is also TTB approved.

I picked it up on BCF a while ago in their 50% off selection and they unfortunately don’t sell it anymore. I think people confused this one with the regular grapefruit, which would explain why it didn’t sell well. But I use it often in citrus punch recipes and Ruby Red Squirt type recipes.

If you can find it somewhere else I highly recommend picking it up.

Hi guys, need a little advice. Nomz SC doesn’t carry Green Apple anymore. What do you recommend for a decent green or sour apple or Granny Smith flavor to blend with Country Apple. Thanks a bunch! :kissing_heart:

That’s a shame I really like (nomz) “apple green” I sometimes use (vta) “granny smith apple” in it’s place but you need to add about 3.5% to get the same saturation. (Nomz) Have it.
