I’m going to have to research that @rcleven as I’ve never seen a stop temp that low. The stall doesn’t happen until at least 150+.
Of course it depends on how you like beef done.
Well THAT ^^^ is perplexing. I’ve asked around, and searched a bit, and I can’t find anyone pulling brisket off at that low temp. YET, that site, clearly states Roast temps and Steak temps, and I LOVE medium rare.
I still gotta get into this one.
I make Italian beef at least once a month. Oven roasted not smoked. Over a roasting pan with 6 cups of beef broth. Small rack on top of pan holds the roast can drip it’s drippings into the broth to make the gravey. I wil cook the roast at 350 degrees ( much higher than a smoker) till internal temperature reaches 135/140 at center of roast. Rest then refrigerate till it’s firm for slicing. Turns out perfect every time. Pork needs to go higher in internal temp. If I remember correctly pork shoulder will stall at about 164. I think this is where the confusion is coming in. Amazing Ribs is a great site. It has everything you need to know and a lot you don’t need to know. It will have sauce and rub recipes from all over the US. My favorites are the KC s.
Chicago Style Italian Beef is one of my treats. Every city has a “Chicago Style” restaurant and some have had good Italian Beef, but in Denver we have one place that nails it perfectly. Of all the places I have lived, this restaurant, for me, hits it perfectly. Brings back memories of growing up in Chicago (actually a south side suburb). Even the smell of the place triggers a smile. I’ve tried making at home and have done okay, but have never gotten it the way I really want it.
Got a friend that moved to Golden? Opened a Chicago style hot dog stand decade’s ago. Was shipping in Scala Italian beef and Veninna hotdogs. Can’t get more Chicago than that.
Sweet. I’ll bet folks appreciated the genuine Chicago cuisine. Outside of Golden is one of my favorite state parks for camping…Golden Gate Canyon State Park. Close enough to Denver to not have to drive for hours and yet it feels like you are out of Denver. Happy 4th.
Crappy Holiday weekend here so far but the rain subsided this afternoon and I managed to get some Shrimp on the Barbie,
Marinaded in Italian dressing and then a good dusting with Old Bay Seasoning
Looks delicious and roasted veggies are always a treat.
