Interesting experiment with the ribs. Half rubbed, and foiled after 3 hours like I typically do, the other half, just salt, pepper, no foiling, just straight 6 hours smoking. Used signature Traeger pellets for fuel, and Applewood chips for the smoke tube, and I was surprised how good they were. Maybe a little drier than I’d like, but I can work on that.
Rubber/foiled on the left, salt/pepper straight smoke on the right ^^^^^.
I finally tried some hanging ribs on the OK Joes Bronco. My first time hanging anything. They turned out OK… I’m used to my Lang or my UDS but I think the Bronco did a decent job for a shitty, rainy day. Sorry no pics… maybe it didn’t happen
