Which Dulce de Leche are you talking about?

SSA, and now that I see that I need to go fix a couple of my recipes because they say TPA. :skull_and_crossbones:

A little assistance for a Werthers original the chewy kind. It’s not perfect but very close, TPA Caramel candy is basically the base for an Werthers caramel and the tpa Caramel adds a slightly richer caramel note. The Ethyl Vanillin and Ethyl Maltol help to smooth out the caramel and keep it from being to sweet. I tried Super sweet and it was indeed too sweet. And vanilla swirl works better than custard due to custards having eggy notes. It helps to blend the two caramels with the nougat which adds the chewy texture and a lot of body.

It doesn’t mean you have to use my idea just helps you with a path to find what works for you.

Oooooooh! Looks good @McDuckie! I’ll definitely give it a try when I get the missing Candy and Nougat. F me, the Vanilla Swirl sounds like the perfect flavor for a Werthers. I have a big bottle, but never thought to try it. Doh!

@muth, The thing with Caramel is that we are working with mostly artificial flavorings, and in my opinion there are TWO types of caramel. The good (natural) stuff, which consists of basically thickened milk and sugar which is cooked down til it’s brown. And then there’s the FAKE (artificial) caramel flavor. Personally, I absolutely can’t stand the fake caramel taste. And to get the real taste of caramel is a TON of work when working with artificial flavorings. Ironically enough, my best attempt at a caramel, IIRC, had no caramel flavoring. It was a 2:1 mix of PUR Consensed Milk to TPA Brown Sugar (or VTA Creme BrĆ»lĆ©e). It worked, and gave me an absolutely natural caramel flavor. As soon as there’s an addition of ANY caramel flavoring, the result turns into artificial tasting garbage. I’ve even tried WF Natural Caramel (salted) hoping for a natural caramel taste, but even the (natural) WF flavoring didn’t help my quest.

With Butterscotch, I found the result to be a lot more pleasant. I only own two butterscotch flavors, Flavorah Smoked, and FW BS Ripple, and them at a 1:2 ratio is all I’ve ever needed. 1% FLV and 2% FW answered all my butterscotch needs. Yeah, ok, so I wasn’t able to recreate a Werthers, but any other mix that needed butterscotch was easily accomplished with these two flavors and whatever other accents were required.

One time I made a mix with Pur caramel coffee with sweet cream, and I wasnt really feeling the coffee so it sat for over a month. I was about to dump it when I tasted it again, tasted just like those Werther’s coffee candies.

This may need a tiny bit of % tweaking, but my initial tests are so promising that it might not. Only time will tell. The first version was a tiny bit too tobacco-dominant, so i ever so slightly lowered the tobaccos, and now this is just about perfect, IMHO.

I’ll make the recipe public and with a write up after another week steep, but I don’t want to be in the raffle and just want to play along this month.

I upped that Carmel to 1% in my v2 recipe and when I test it it’s all I taste. That’s what I was afraid of. :skull_and_crossbones: I hope it goes away, but it seems to just get stronger. Even the brown sugar at such a low % is taking over.

I’m always up for a tobacco mix, thx! :+1:

I remember you saying flv bacco was astringent to you. If you don’t want to wait 14 days, try this one on for size. It’s a killer SNV, and assumingly will only get better. As soon as the bubbles disappear it’s good to go.

Not sure if posting private links works, so in case not I added the JPG.
