No her owner came back the next evening. Showed me the food and water he left for her while he was gone. She was just lonely. She’s escaped three times since then. She’s determined to come visit.

Mine is 4, I hope she still lives a long time. At least you can see her everyday and have the joys of her without the responsibility.

Congratulations!!! It’s been a busy month of March for me too. The 22nd was the 48 year anniversary and the 29th was my 70th birthday. Nice to know I can rest now.

Chicago Style Italian Beef is AWESOME. Every city I’ve lived in has a “Chicago” place and most have had okay to good Italian Beef sandwiches. We have one here in Denver that is the best I’ve tasted since leaving Chicago in 1972. The first time I walked in the place the smell brought back childhood memories. I’ve made Italian Beef with a few different beef roasts and a few different ways. All have been good, but the Italian Style Beef from the place on West Colfax is superior to anything I’ve made. Thanks for the smile and the memories.
It’s really easy to make. I make mine from bottom round a fatty cheaper roast. Cook over a roasting pan of 6 cups of water brought to a boil adding 4 beef bullion cubes. While the water heats to boil mix I cut about 6 X’s in the roast and insert a sprig of garlic in each X. Mix 1Ts Oregano, 2 Ts of basle, 2 ts black pepper. I like it hotso 1/4 ts red pepper flakes Spread a over roast. Any extra add to water. Cook roast above the pan at 400F for about 1/2 hr per pound. Better to undercook than over cook. 130 to 140 degrees. Let cool on counter. Wrap and put in fridge to firm up. Slice as thin as you can. The water is now your gravey. Heat sliced beef in gravey and serve. About 1/2 pound per sandwich. Enjoy.
