@rcleven I don’t use it as a crutch, but to enhance the pullback on the bone tips, and it allows me to add more flavor profiles to them.
What liquid are you using to steam inside the foil and how much and how long?

@rcleven, just a little bit of apple juice, but not much, it’s really more about the additional profiles. Baby backs, maybe not even an hour of the total smoke.
Even though they’re “babies”, I don’t do the 2-2-1 with them. About 3 hours smoke, then butter, brown sugar, touch of honey on both sides, 1/4 cup apple juice, and some chili sauce foiled for about an hour, then back out on the rack for 1.75-2.0 hrs depending on how quick they finish up. No sogg, and no falling off the bones, but just a good bite, and pull. Sometimes it is voodoo getting them JUST right.
